A view from the stove for tonight‘s private party.
The client wanted, gumbo, jambalaya, a mixture of greens. In the pot, we have turnip greens, collard greens, and mustard, greens. In the steam tray last, but not least red beans and rice.

Tomorrows special at Gibsons Discount Center will be something completely new for Kerrville, The Cajun Cowboy's version of "Chicken Sauce Piquant" 5-28-2026, 11-530pm
Not often seen on menus in this area; but where I come from, it's a staple dish in many households, and one of The Cajun Cowboy's favorite meals.
What makes this dish so delicious is the melding of a dark brown roux (like you make for gumbo), and a red tomato sauce; this combination of sauces fried up as a base with finely diced Andouille sausage gives the piquant a deep tangy flavor.

Tomorrows special for our regular Thursdays at Gibsons Discount Center will be my delicious Fried Fish.
Great tasting fish comes from the wet and dry batter, and The Cajun Cowboy has a homemade taste treat for you. First of all, the wet batter is made from egg, yellow mustard, and Louisiana hot sauce. The dry batter is made up from careful measurements of corn flour, cayenne pepper, black pepper, onion power, garlic power and sea salt. The fish is dredged in the wet batter and then coated in the corn flour, then deep fried in a 350-degree fryer until golden brown.
The special will be $14.00 served with one side dish

I had the pleasure of cooking for Neal Coldwell of Neal’s taxidermy; he is without a doubt on of the best in his field, and one first class individual- I am honored to call him a friend.
For his party I severed
A pork and sausage jambalaya with venison back-strap
Smoked Boston butt
Venison, hamburgers
Cajun chicken on a stick for the kids
and the side dishes were
Macaroni and cheese,
Potatoes, salad
and Cole slaw

A dish consisting of rice, cubed Boston butt, smoked sausage, onion, garlic, salt and cayenne pepper. This dish is a Louisiana staple, and one of The Cajun Cowboys favorites. Simply delicious!!

Thursday March 28th from 11 until 6pm in front of Gibsons Discount Center, The Cajun Cowboy will serve New Orleans style Muffuletta sandwich as this week’s special.
*** This time we have an ample supply of Muffuletta Bread****
From a recent New Orleans purchasing trip, we brought back Central grocery olive salad, and round Muffuletta bread.
Central Grocery is the Home of the Original Muffuletta. Located on Decatur Street in the middle of New Orleans’ French Quarter, founded in 1906 by Salvatore Lupo, a Sicilian immigrant who is famous for creating the muffuletta.

We have 60 pounds of crawfish that will be boiled and served Thursday 3-12-26 at Gibson’s discount Center.

I have a private party in a couple of weeks; in preparation I decided- on an off day- to do a test brisket on my old Hickory CTO, the end result is quite remarkable. Cajun barbecue is so Cajun freaking good!!!
