This week at The Trailhead B**r-garden ( 2100 memorial Boulevard) my special will be one of my delicious seafood cream sauces.
In New Orleans variations on the “French Béchamel” sauce are prevalent in numerous restaurants; with many different names though, but what they all have in common is lots of butter and heavy whipping cream incorporated a rich stock. 😋
We serve from 5-9 Wednesday and Thursday

What people say
The Cajun Cowboy in San Antonio is a delightful culinary gem that brings the vibrant flavors of Louisiana to Texas. Michael Palermo, the mastermind behind this food truck, has deep roots in Cajun culture, having been born and raised in New Orleans and spending 17 years in Gonzales, known as the "Jambalaya Capital of the World." His rich culinary background allows him to create dishes that are not just meals but experiences steeped in tradition.
At The Cajun Cowboy, you can expect an authentic taste of Cajun cooking that showcases the essence of Southern Louisiana cuisine. Central to his dishes is "The Holy Trinity"—a harmonious blend of sweet onions, celery, and bell peppers—combined with garlic to create a flavor profile that is both robust and inviting. Each dish is crafted with care, reflecting Michael's passion for cooking and his commitment to sharing the true spirit of Cajun food.
What sets The Cajun Cowboy apart is its emphasis on highly seasoned flavors rather than overwhelming heat. This approach ensures that every bite is a celebration of taste without being overly salty or spicy. Whether you're indulging in classic jambalaya or savoring a po' boy sandwich, you’ll find yourself transported to the lively streets of New Orleans.
With two decades spent as a proud Texan, Michael has seamlessly blended his love for Cajun cuisine with local influences, making The Cajun Cowboy a must-visit for anyone looking to enjoy delicious food prepared with heart and authenticity. Don't miss out on this unique culinary experience; it’s sure to leave you craving more!
