Just hauled the pit and fired it up for a test run on baked potatoes. Walking you through why I run a Lone Star Grillz with baffle plates.
The baffle plates spread the heat from the firebox across the whole pit, so every spot cooks the same. A lot of big pits don't have them. That's what lets me cook hot and even, start to finish.

6am at H-E-B and look what was hiding in the meat case. Prime dino ribs for $6.79 a pound.
Quick tip: don't grab the first pack you see. Go early, dig through the whole case and read every label. Sometimes the best deal is sitting under everything else.

I grew up on the South Side. Sundays meant barbacoa and tamales, warm tortillas and a cold Big Red, with the whole family around the table.
Those flavors never left me. I still use Del Rio Tortilla Factory, Bolner's Fiesta Products, Inc. and local salsa in everything we make, because that's what home tastes like to me.
Thank you to everyone who comes out and lets me share that with you. When you eat with us, I hope it brings back a little piece of home. It does for me every time.

You don't need a $200 knife to slice brisket. You need a long one.
This 12-inch Dexter-Russell, Inc. slicer is under $35. Long enough to cut through a whole brisket in one pull so it doesn't tear.
I go through one or two a year because I slice a lot of brisket. At home, one will last you years.

Test run with HeartBrand Beef before Burger Showdown 7.0. That fat rendered out and crusted up nice on the flat top. For the competition we blended it with our house-ground brisket. Thank you HeartBrand for backing the event 🔥

Friday night we're in the Burger Showdown 7.0.
Grateful for the opportunity to cook alongside some of San Antonio's best.
We're bringing our BBQ Smash Burger. Smoked brisket on top, our rub, our sauce. Barbecue guy at a burger fight, let's see how it goes.
