Hello Everyone,
As I’ve mentioned before, the increased traffic at Annagio’s has meant a little less time to share the day-to-day adventure here on Facebook. I truly miss sharing both the good moments and the difficult ones that came with opening Annagio’s and learning as we went along. From the beginning, we never hesitated to celebrate the successes or be honest about the bumps in the road.
Now, nearly two and a half years later, Annagio’s continues to grow, evolve, and learn every single day. Our motto from the very beginning still holds true today: one customer at a time.
Over these past couple of years, we’ve had the privilege of meeting so many wonderful people and building an incredible group of regular customers who mean the world to us. Annagio’s would not be where it is today without every person who has supported us, shared our posts, ordered dinner, recommended us to friends, or simply gave us a chance.
While we’ve grown substantially, we still have our sights set on the next chapter — a place of our own. We continue to work diligently toward making that dream a reality.
One of the biggest accomplishments along the way has been building our own online ordering system. Ordering directly from Annagio’s instead of third-party delivery apps helps our customers save money while also allowing us to keep more of what we earn. That support truly makes a difference for a small business like ours.
And of course, our Wednesday Pasta Special has become something special all on its own. Every Wednesday we get absolutely slammed by folks coming in for fresh pasta and special pricing. Wednesdays are exhausting, chaotic, and honestly one of our favorite days of the week because of the amazing people who show up to support us.
We just wanted to take a moment to share a little update on what’s been happening at Annagio’s and, more importantly, to express our sincere gratitude to everyone who has supported us in chasing this dream.
If you’ve never tried Annagio’s, we would truly love the opportunity to serve you. We promise you’ll enjoy the food.

125 hungry guests. One big fajita bar. One unforgettable night.
Last night Annagio’s had the honor of serving the San Antonio Stock Show & Rodeo Appreciation event. We stepped away from our normal scratch-made Italian menu for the evening and served a full fajita bar for about 125 people.
Thank you to the organizers for choosing Annagio’s and trusting us with your event. We appreciate everyone’s patience and support while we closed regular service to make sure every tray stayed full and every guest was taken care of.
The compliments, kind words, and support meant a lot to our family.
While we loved bringing the fajitas, Annagio’s is normally all about scratch-made Italian comfort food — homemade pastas, chicken parmesan, baked mostaccioli, Italian beef, Alfredo made the right way, and more.

Last night Annagio’s had the honor of catering the San Antonio Stock Show & Rodeo appreciation event for approximately 125 guests.
We made the decision to close for the evening so we could give the event our full attention and make sure every pan stayed full, every guest was taken care of, and the food represented Annagio’s the way it should.
We want to sincerely thank the organizers for choosing Annagio’s to provide the food for their celebration. We were proud to serve a full fajita bar and even more proud of the compliments, support, and kind words we received throughout the evening.
As a small family-run business, opportunities like this mean a great deal to us. Every event, every customer, and every bit of support helps us continue building the dream of one day opening our brick-and-mortar restaurant here in the community.
Thank you as well to our regular customers for understanding why we were closed last night. We appreciate your support more than you know, and we look forward to seeing everyone again today.

A lot of people are talking about Italian beef right now.
At Annagio’s, we have been making ours long before the big chains decided Cibolo was worth noticing.
Slow-roasted beef. Real jus. Fresh bread. Roasted sweet peppers, hot giardiniera, or both.
Our giardiniera is made in-house with chopped sport peppers, Calabrian chile, garlic, and oil because details matter.
No assembly line. No shortcuts. Just the kind of Italian beef we grew up eating and wanted to bring to Cibolo.

Wow. Last night’s Wednesday Pasta Special was one for the books.
We were absolutely slammed, and I want to sincerely thank everyone who came out to support Annagio’s. We know there were longer wait times than usual, and we truly appreciate everyone’s patience and understanding while we worked as fast as we could to take care of each and every order.
Seeing so many people come out for our pasta special means more to us than you know. Nights like last night remind us why we do what we do.
Thank you for supporting a local family business and for sticking with us through the chaos. We are grateful beyond words and already looking forward to doing it again next Wednesday.

Hello everyone,
I realized the other day that I haven’t posted in a while, and I wanted to share a little about what’s been going on at Annagio’s.
First, we’ve continued to grow… and that’s honestly the reason for the silence. It’s a good problem to have, but it also means long days and a lot of work behind the scenes. We wouldn’t change a thing.
The other night, my youngest son Sammy (13) asked if he could start making videos about what we do every day—shopping, prepping, cooking, and everything that goes into keeping Annagio’s running. I think I’m going to turn him loose and let him do it his way. I’m curious to see what he sees in all of this… should be interesting, if nothing else.
We’ve also been working on a few new dishes and wanted to get your thoughts.
We’ll be adding Bucatini Carbonara to the menu soon. This is something I’ve been wanting to do for a while, and we’ve finally sourced the right ingredients—farm fresh eggs and true guanciale—so we can do it the way it’s supposed to be done.
Another idea I’ve been playing with comes from a couple of directions. I’ve been working with smoked picanha and thinking about turning it into a stuffed pasta—either ravioli or scratch-made manicotti. Both have potential, and I’d really like to hear what you think.
Most importantly, Doreen and I just want to say thank you. Your support means everything to us, and it’s what allows us to keep building this the right way, day by day.
