I am so thankful to all those who have supported me since Iāve started my small business journey in August of last year. I never wouldāve thought Iād step into this realm of having my own little business especially at this time in my life. But God does everything for a reason and He has pushed me to take this leap of putting myself out there (for those of us introverts, this is a big deal lol) and Iām thankful to all the knowledge and experience Iāve gained thus far. So as I grow in my personal life and my business, I have decided to rebrand from Coraās Vegan Eats to Del Cora Eats. This rebranding aligns more with the lifestyle and health decisions Iām leading and to the Mexican traditions Iāve grown up with and cherish. So to clear up the confusion Iāve noticed, my real name is Mariela, not Cora lol. Cora has been a name of endearment given to me by my boyfriend (who some of you have seen help me) and he has played a huge role in pushing me to start this business. Hence the initial decision to name my business āCoraās Vegan Eatsā and to be vegan-only. But the word ācoraā is short for the Spanish word ācorazonā which means heart. A lot of meaning and memories are stored in the heart, like for example the memories of the sights, smells and tastes of the food growing up in a Mexican household and later on in life wanting to learn how to recreate these dishes to continue the traditions in a way that aligns with who I am. So āDel Coraā means āfrom the heartā and I truly feel it is a fitting name to what my business represents. So to be clear, I will still be serving vegan options as the vegan community has so much to grow and I wish to continue serving it, but I will also be doing non-vegan food. I respect all diets and lifestyles as Iāve lived through all of them myself. I canāt wait for what 2025 will bring!
