Our final pop-up is here. One last round. š
Weāll be collaborating with Mochi Bowl for the last event, so yāall can pull up and get ramen, rice bowls, Korean corn dogs, and boba tea all in one spot. Weāre located right off the De Zavala H-E-B shopping center next to Wingstop.
Originally this was supposed to be a 3-day event, but with Sunday being Motherās Day, we decided to make it a 2-day run instead:
Friday: 3PMā8PM
Saturday: 12PMā5PM
The original plan was 300 bowls total ā 100 bowls a day ā but weāre adjusting and extending service to 150 bowls each day. That means weāll aim to seat around 30 people an hour instead of the original 25.
How it works:
Your chopsticks are basically your ticket. Youāll receive a pair for each ramen ordered.
Unfortunately, we cannot do to-go orders. Even if you bring your own containers, it just canāt be done properly in this kitchen setup. Thereās a whole process to making sure ramen travels well and stays fresh, and realistically I canāt execute that while also trying to push out 30 bowls an hour by myself.
Iām also not 100% physically and definitely rusty, so I have to be realistic about my energy levels. I wanted to bring back some old small plate favorites too, but I know I wouldnāt be able to maintain the quality and pace with where Iām at right now.
Also, if you see empty tables, that doesnāt always mean weāre ready to seat immediately. Bowls need to be washed and dried, ingredients need to be restocked, and the kitchen needs time to reset between waves. The goal is still 30 bowls an hour, but if we find our rhythm and everything is stocked and moving smoothly, weāll continue seating people.

To the 300 people getting one last bowl: enjoy it, cherish it, and thank you for being part of this journey. Iām truly grateful for all the love and support over the years, and the only way I know how to show that gratitude is by putting my body on the line one last time for yāall. ā¤ļø

This will also mark MochiBowlās soft opening - a weekend filled with comfort food, community, memories, and one last chance to show love to a chef who meant so much to San Antonioās food scene.

Alright yall Im stepping back behind the burners for a very limited final run of Noodle Treeās legendary ramen.
This is the first part of a 2 part pop up. For the downtown folks we will be here for 1 night only,
We kick things off, chef Page and The Newstand are opening their doors to host the first night this Saturday, May 2nd from 5-9PM at 1900 Broadway.
We will only be offering ramen on this night, with collaborations of The Newstand amazing coffee and breakfast sandos.
We will announce the second part of this 3 day pop up next week.
For this pop i will shoot for about 100 bowls.
Come hungry. Come early. Come support.

I wanted to build a legacy with this restaurant, I didnāt care for awards, recognition, or attention. I just wanted to build a personal restaurant where I knew my guess and had a mutual relationship over great food. With the turnout the past couple of weeks I know the mission was accomplished. I ask for one last thing, if you have time please leave a review so the noodle tree legacy can live on and ppl can know what we had. 7 greats years of long night, long days, blood, pain, sweat, Covid, hatred, THE BEST RAMEN ON San Antonio, and memories I will never forget.

Briza, Taylor, Egypt, Michelle, Karissa, Zack, Jules, Kelsey, Spencer, and Angelo. Yāall drove me crazy and I did the same to you but it was my honor and privilege to work with yāall.

We are starting to see a huge turnout. Iām hate making ppl wait but I also understand. Iām very appreciative of all the love and support. I am one man running the show so it will take some time.
