Our final pop-up is here. One last round. šŸœ

We’ll be collaborating with Mochi Bowl for the last event, so y’all can pull up and get ramen, rice bowls, Korean corn dogs, and boba tea all in one spot. We’re located right off the De Zavala H-E-B shopping center next to Wingstop.

Originally this was supposed to be a 3-day event, but with Sunday being Mother’s Day, we decided to make it a 2-day run instead:

Friday: 3PM–8PM
Saturday: 12PM–5PM

The original plan was 300 bowls total — 100 bowls a day — but we’re adjusting and extending service to 150 bowls each day. That means we’ll aim to seat around 30 people an hour instead of the original 25.

How it works:
Your chopsticks are basically your ticket. You’ll receive a pair for each ramen ordered.

Unfortunately, we cannot do to-go orders. Even if you bring your own containers, it just can’t be done properly in this kitchen setup. There’s a whole process to making sure ramen travels well and stays fresh, and realistically I can’t execute that while also trying to push out 30 bowls an hour by myself.

I’m also not 100% physically and definitely rusty, so I have to be realistic about my energy levels. I wanted to bring back some old small plate favorites too, but I know I wouldn’t be able to maintain the quality and pace with where I’m at right now.

Also, if you see empty tables, that doesn’t always mean we’re ready to seat immediately. Bowls need to be washed and dried, ingredients need to be restocked, and the kitchen needs time to reset between waves. The goal is still 30 bowls an hour, but if we find our rhythm and everything is stocked and moving smoothly, we’ll continue seating people.

And with that… this is it for the pop-ups.

To the 300 people getting one last bowl: enjoy it, cherish it, and thank you for being part of this journey. I’m truly grateful for all the love and support over the years, and the only way I know how to show that gratitude is by putting my body on the line one last time for y’all. ā¤ļø

Now that I’m retired I’m transitioning to something different. Just going around and using my near 20 year experience as a culinary chef, to showcase to you what actual amazing food is without the BS instagram foodie ā€œinfluencersā€ or chasing views. No frills or perfect videos, just watching from my perspective and trusting my amazing culinary palette of 20 plus years.

I wanted to build a legacy with this restaurant, I didn’t care for awards, recognition, or attention. I just wanted to build a personal restaurant where I knew my guess and had a mutual relationship over great food. With the turnout the past couple of weeks I know the mission was accomplished. I ask for one last thing, if you have time please leave a review so the noodle tree legacy can live on and ppl can know what we had. 7 greats years of long night, long days, blood, pain, sweat, Covid, hatred, THE BEST RAMEN ON San Antonio, and memories I will never forget.
